This year, Pancake Day (or Shrove Tuesday) falls just after Valentine’s Day, so we thought there’s no better time to dust off our oat-based pancake recipe and share the love for one of our favourite treat-time brekkies. Having said that, pancakes offer limitless savoury and sweet topping options, meaning they are versatile enough to enjoy not just for brekkie but at any time of day!

Traditionally, Shrove Tuesday was marked by Anglo-Saxon Christians as an opportunity to use up any food “temptations” such as eggs and butter in the house prior to fasting and abstaining during the period of Lent. Now of course, the day is more commonly used as a good enough excuse to fill up on everyone’s favourite comfort food.
Along with the usual pancake “temptations” of butter and eggs, our pancake recipe also calls for Plush Porridge Oats, adding a lovely texture and nutritional benefits to the regular pancake batter. Oats are a great source of fibre and protein, as well as containing antioxidants than can help to reduce blood pressure and improve heart function. Wholegrain oats also help you to feel fuller for longer, and so less likely to hit a mid-morning slump.
Here’s our quick-fix recipe for a delish sweet or savoury recipe to kick-start Pancake Day:
INGREDIENTS
- 1 cup of Chiltern Natural Foods Plush Porridge Oats or Gluten-Free Plush Porridge Oats
- Pinch of Salt
- 1 teaspoon Baking Powder
- Ground Cinnamon to taste
- 1 Egg
- ¼ cup Milk (or just enough to make a thick batter)
- 1 teaspoon Vanilla extract
- Your favourite sweet or savoury pancake toppings
METHOD
Step 1: Blitz one cup of Plush Porridge Oats or Gluten-Free Plush Porridge Oats with a pinch of salt in a food processor or bullet blender until fine.
Step 2: Add a teaspoon of baking powder and a good few shakes of cinnamon to the mix.
Step 3: In a separate bowl, combine an egg, milk and a dash of vanilla. Then slowly stir the wet mixture in to the blitzed oats until it forms a nice thick batter.
Step 4: Cook for about 2 minutes on each side in a lightly oiled/buttered pancake pan until golden brown and set. Serve with your favourite toppings – here we’ve used a simple warm berry compote and the classic lemon & sugar combination for a sweet treat.
* For vegan oat pancakes replace the egg with a flaxseed mixture, swap dairy milk for oat milk or any plant-based milk drink, and honey with agave or any plant-based sweetener of your choice.
